OpenGL Sample Code (http://developer.apple.com/samplecode/Carbon/idxGraphicsImaging-date.html#doclist)
You'll probably want to focus on the AGL projects.

I also suggest OpenGL Programming Guide for Mac OS X (http://developer.apple.com/documentation/GraphicsImaging/Conceptual/OpenGL-MacProgGuide/index.html) .
This is not an intro to OpenGL, but it discusses all the important Mac-specific topics.
